Ingredients

Boba:

Flan:

  • 1 3/4 cups heavy cream
  • 1 cup whole milk
  • 5 bags of Tea Zone Assam Black Tea
  • Pinch of salt
  • 1/4 cup plus 3 tablespoons, white granulated sugar
  • 3 large eggs
  • 2 large egg yolks

Caramel Topping:

  • 1 cup sugar divided
  • 1/4 cup water

Special Equipment:

  • 6 to 8 oven-proof ramekins
  • 1/4 cup water

 

Prepare the Boba:

  1. Boil water and cook the Tea Zone Original Tapioca Pearls according to the package instructions.
  2. Once cooked, drain and mix the boba with the Tea Zone Dark Brown Sugar Syrup. Set aside.

 

Prepare the Flan:

 

  1. Preheat your oven to 325°F (160°C).
  2. In a saucepan, combine the heavy cream and whole milk. Add the Assam Black Tea bags and let them steep for about 10 minutes to infuse the tea flavor into the milk mixture.
  3. Remove the tea bags and add a pinch of salt. Heat the mixture over medium heat until it's hot but not boiling. Remove from heat and set aside.
  4. In a separate saucepan, melt 1/4 cup of sugar over medium heat, stirring constantly, until it turns into caramel. Be careful not to burn it.
  5. Quickly pour the caramel into the bottom of each of your oven-proof ramekins. Tilt the ramekins to ensure the caramel coats the bottom evenly.
  6. In a mixing bowl, whisk together the eggs, egg yolks, and the remaining 3 tablespoons of sugar.
  7. Gradually pour the hot tea-infused cream and milk mixture into the egg mixture while continuously whisking.
  8. Strain the custard mixture through a fine-mesh sieve into a clean bowl.
  9. Pour the custard mixture into the ramekins with the caramel at the bottom.

 

Bake the Flan:

 

  1. Place the ramekins in a deep baking dish and fill the dish with the 1/4 cup of water. This will create a water bath for even cooking.
  2. Cover the baking dish with aluminum foil and carefully place it in the preheated oven.
  3. Bake for about 35-40 minutes or until the flans are set but still slightly wobbly in the center.
  4. Remove the ramekins from the water bath and let them cool to room temperature. Then refrigerate for at least 2 hours or until completely chilled.

 

Assemble and Serve:

 

  1. To serve, run a knife around the edge of each ramekin to loosen the flan.
  2. Place a plate over the top of the ramekin, then quickly flip it over to release the flan onto the plate with the caramel sauce on top.
  3. Serve the flan with a generous spoonful of the prepared boba on top.

Ingredients

  • 1.5 cups (180 gms) All-purpose flour
  • 1.5 tsp Baking powder
  • 1/4 tsp Baking soda
  • 1/8 tsp Salt
  • 1.5 tsp Tea Zone Matcha Green Tea Powder
  • 1/2 cup (115 gms) Sugar
  • 3/4 cup (150 gms) Almond milk
  • 1 tbsp Apple cider vinegar You can use white vinegar too
  • 1/4 cup ( 45 gms) Coconut oil You can use any neutral flavored oil
  • 1 tsp Vanilla extract

Matcha Glaze

  • 1/2 cup ( 50 gms) Icing sugar
  • 2 tbsp Almond milk
  • 1 tsp Coconut oil You can use any neutral flavored oil

 

Instructions:

For the Matcha Donuts:

  1. Preheat your oven to 350°F (175°C) and grease a donut pan with oil or cooking spray.
  2. In a small bowl, combine the almond milk and apple cider vinegar. Stir and set it aside for a few minutes to curdle.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and Tea Zone Matcha Green Tea Powder.
  4. In a larger mixing bowl, add the sugar, melted coconut oil, and vanilla extract. Mix until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the almond milk and vinegar mixture, starting and ending with the dry ingredients. Mix until just combined. Be careful not to overmix; a few lumps are okay.
  6. Transfer the donut batter to a piping bag or a plastic ziplock bag with the corner snipped off. Pipe the batter into the greased donut pan, filling each cavity about two-thirds full.

  • ¾ cup (154 g) granulated sugar
  • 1 ½ cup (195 g) cake flour
  • 2 teaspoon baking powder
  • ¼ teaspoon kosher salt

Brown Sugar Boba:

Milk Tea Buttercream:

  • ½ cup tea infused butter **see note
  • 3 cups powdered sugar
  • 1 teaspoon pure vanilla extract
  • pinch kosher salt
  • 3 Tablespoon tea infused milk

 

Instructions:

For the Tea Infusion Prep:

  1. In a saucepan, melt 1 cup of unsalted butter over low heat.
  2. Add 8 bags of Tea Zone Assam Black Tea to the melted butter and steep for about 15 minutes.
  3. Remove the tea bags and let the tea-infused butter cool.
  4. In a separate saucepan, heat 1 cup of whole milk until hot but not boiling. Add it to the tea-infused butter, and mix well. Set aside.

For the Brown Sugar Boba:

  1. Cook the Tea Zone Original Tapioca Pearls according to the package instructions.
  2. Once cooked, drain the boba and mix them with Tea Zone Dark Brown Sugar Syrup. Set aside.

For the Cupcakes:

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a mixing bowl, combine the tea-infused butter and granulated sugar. Cream them together until light and fluffy.
  3. Add the egg whites and vanilla extract to the butter-sugar mixture. Mix until well combined.
  4. In a separate bowl, whisk together the cake flour, baking powder, and salt.
